As an ER RN, I saw a few kids who passed out when/just after eating something ice-cold. Just an over-exagerated reaction of the vagal nerve.
However, in addition to EKG I think an echo-cardiogram is in order to rule out any anatomical abnormalities. (i.e mitral valve prolapse)
Not to alarm you -- just to be safe.

In re-reading the January event, it crossed my mind that maybe a sleep deprived EEG is a good idea too.
Did Jacob pee himself either time? Was he especially groggy afterwards?

In the clover, he never peed himself, but was very groggy both times afterwards; he just wanted to go to sleep.

Mention this grogginess to his doctor and ask specifically that he be checked for a seizure disorder.
There are many types of seizures and not all are the typical "convulsions" -- some can just be simple staring episodes or repetitious actions. Many are well controlled by meds.
